I like to ask women out to coffee "to see if I want to take you on a for real date or not." Frame is, you seem cute, but I haven't made up my mind yet. So let's see if we have chemistry.

Then on during coffee, you want to kind of playfully screen them, asking a mix of get-to-know-you Qs, mixed with what kind of guys they like, romantic/sexual questions, and some teasing/qualifying. She will ask you stuff too.

Basically, you two are negotiating how you two will relate. You want to show her 1. You can lead 2. You have boundaries 3. You are genuinely interested in her 4. You are invested in her having a good experience.

If you plan the whole thing and direct the flow of the conversation, you've got #1 down. The second you show by having a realistic ability to walk if you don't have chemistry, along with calling her out playfully for misbehavior.

Three you do by making eye contact, listening, asking intelligent questions based on what she says and qualifying her based on what you actually like in a woman. Four you do by having basic manners, and being reflexive to her social cues.

Sit next to her if you can, and make sure to touch her a few times during the coffee date. Maybe she has something on her eyelash, or you touch her leg to get her attention, w/e. If it goes well, kiss her at some point, then arrange a for real date (if you like her), based on what you figured out that you like.

Make it the topics about her, or the two of you (potentially) together. If you do this... I've never not had a date go well. At worst, we figure out that we don't have chemistry, but it's usually a mutual thing at that point.
