Move on. She was clear, she is not interested. The best you can do is respect her wishes. Also if you had so much fun maybe she can be more of a friend than a romantic interest, but I would only advise that if you can truly put your feelings aside.

No, let her reach out to you if she's interested. Honestly sounds like some other stuff might be going on in her life which resulted in her change of mind if it was that drastic. There really isn't any way to know though, keep moving on with your chin up high.

Waiting a week before texting is good. But I wouldn't "dwell on the past" too much. So don't say "remember how fun the first date was?", but focus on the now&future. So check up on her, see if she's interested to meet again. There's a slight change she thinks differently about things.. But sadly it's kind of a last resort, so if she doesn't think differently, move on and forget about her, however conflicting it feels.
