I'm guessing the plans are already set, so don't flake now. However, next time you really shouldn't take a new girl you want to fuck to an expensive dinner date. This screams Beta before the date even takes place. You are buying into a girls frame if you are asking her on a dinner date. You should keep it simple on the first few hangouts. Go grab a drink or do something that you generally enjoy doing with or without a woman by your side. Taking a girl out is inviting her into your life/frame for a bit to get to know each other.

With that being said, if this dinner place is somewhere you are going because you really like the food then great. Make sure she knows that though. Its about the food, not her. Split the bill.

How to act? Aloofness, treat her like a bratty little sister, don't agree to everything she says, eye contact, tease, escalate a little before the dinner, amuse yourself, keep control / frame. Try to do a venue change at the end of dinner at a place that YOU decide to go to. Take her to a bar, preferably closer to your house so that you can bring her back. Try to find seating where you are side by side for easier escalation. Keep escalating. Keep escalating.

Keep escalating.

Be prepared to walk away at any given moment if she does not act appropriately. You are the prize.
