College has a lot of options to approach. You can literally say anything as long as it's not weird and you have some leeway since girls often think they know you from another class.

One thing you can use is ask her about her prof because you are going to be taking him next sem. If she seems receptive it's game, but if she's dismissive you have a few options. If she is in your major, the likeliness of you encountering her again is high so best to not over-exhaust it. Leave on a high note and don't creep her out. Next time you see her again you have another chance. If she's a different major you may want to keep pushing and go for an instadate since the likeliness of you seeing her again is lower.

Get a snack. A shareable kind. Like an odd flavor of chips, or dried fruit or caramel corn.

Say 'Hey'. Then say whatever you want.

When you run out of things to say, offer some of your snack.

I'm out of college and this is literally how I socialize with adults.
