I know about the obvious topics, Religion, Politics, Exes, your dating experience, but what else should you never reveal if you have only been on between 1 to 3 dates?

I think a more practical focus would be how to conduct conversation, because the topics come with the flow of conversation, if your focus is in the right place.

If you focus on the right place, then the person you're talking to will be supplying you with multiple topics, and many of them will be good to follow up on.

(I'll elaborate more below.)

I'm an open book and I reveal way to much, I'm trying to improve this.

The issue is not so much revealing too much, so much as it is pushing one's own opinions or agenda in conversation with little to no consideration for the other party.

Here's a practical model for conducting (in person) conversation:

You say something or ask a question. This could be even something really basic like, "How was your day?"
As they respond, you shift your focus to actively listening, as close to 100% as possible. Avoid trying to plan what you're say next while they're talking. A conversation is two-way and being in your head pulls you out of it and robs you with valuable information.
When they finish talking, you can take a second or two to think about what they said, then choose something, some aspect of what they brought up, and follow up on it.
Questions about motivation or emotion are good. Asking how she felt about something or why she did something, etc.

This model for a conversation allows you to avoid the common missteps of blabbing too much about yourself, or becoming focused on trying to get her approval or validation.

In general, you still have to beware the topics of exes, how many people either of you have slept with, etc. The main reason being that these topics do nothing for you.

The need to know them about these things is a symptom of insecurity.

That said, by following the model for conversation that I outlined, you'll see it coming if she starts angling towards those topics, but being in the position of actively listening gives you the option of picking and choosing from what she's talked about. You can steer conversation more easily.

Topics like religion and politics are not terrible, per se, it's just that it's too easy to find oneself sticking their feet in their mouths.

However, if one's focus is on actively listening and trying to be non judgmental, then she'll be blabbing her position first.

So you'll know what to avoid in your own responses. These topics are FINE if you're reading the girl in this way. As opposed to blindly plowing forward with strong opinions.

My biggest advice on not being an open book, and this helped me tremendously, is to just deflect questions with playfulness. Girls are usually very good about not asking the same question twice in a row.
