Exactly, why else would one of the most common responses to to an unwanted advance be "I have a boyfriend", because plenty of men respect that and back off.
There's only so much time in life and if you are after a relationship approaching someone who is already in one is a waste of time, it's pointless, if she does leave him for you all that proves is she's not loyal and she's just as likely to leave you for someone else.

I don’t think that’s what she meant, at all. She’s trying to understand why friendship or acquaintance seems impossible with men that she interacts with at her work. Its either a lead to something potentially more or a cold shoulder forever after. I completely understand her frustration because, it really do be like that though, sometimes. I’m going to go out on a limb here and say that her issues are a direct result of the environment where she works.

The way she describes it, it sounds like:
A. Before they find out she has a guy, they are friendly.
B. After they find out she has a guy, they are not so friendly anymore.
And this seems to bother her.
Let's analyze this. Based on what she wrote, what is going on? The key moment where everything changes is when they find out that she has a guy. Why would this change things? I think the most obvious answer is that guys don't want to be seen as interfering in someone else's relationship. It's also very possible that they were friendly with her because they thought that she might be single, and they would have liked to have dated her.
In my opinion, she should not be upset by this, because it very much is probably because they are respecting her relationship with her guy, which she should consider to be a good thing.
Why would it bother her? Maybe she feels like it reveals that they only were friendly to her because they wanted to date her. But doesn't this happen all the time -- people treat other people special whom they want to date. Is it incorrect? Well, maybe it would be a more fair world if everyone treated everyone else exactly as they deserved, and not based on things like appearance or attraction. But can she expect that to change? And imagine if husbands and wives treated each other just the same as they would treat a random stranger. Maybe that would technically be more fair, but is that really what that woman would want?
And also, if she has a guy, why be so concerned about getting attention from other guys?
