I disagree that they necessarily behave exactly the opposite way. Rather (as the rest of your analogy suggests) it's simply that what their behavior is attractive, and the behaviors she said she liked aren't actually on her shopping list.

In other words, if a woman says, "I want a guy who is funny" she's not actually looking for a guy who's the exact opposite - who isn't funny. What's actually going on is, "funny" just doesn't enter into it, at least not initially. The guy she likes may be funny, or he may not.

A better analogy I think is car shopping. I happen to like black cars. They're shiny. They look cool. I don't know. That's just what I like. But if my choice is between a black hyundai and a red ferrari, I'll take the ferrari.

I'm not lying when I say I like black cars. And I'm not picking the ferrari because it's "the exact opposite" of what I said - after all, if there was a black ferrari I'd take it over the red one.

What's actually going on is a little more subtle. Color is a real preference that I have, but it's so far down the list of actual selection criteria that it's not really helpful in understanding me. If you ask the question a little differently, you might get a different answer, but there's also the possibility that I'm not conscious of the actual selection criteria.

At any rate, when a woman says, "here's what I'm looking for" for example, "I want a guy who's funny" what she actually means is, "I want a guy that I'm attracted to who is funny." But even if he's not funny, I'm still attracted to him.

"Funny" isn't really why I'm attracted to him.

If you're a supermarket, you live by the principle that the customer is always right. It amazes me when people take that slogan literally. Of course the customer isn't always right, nobody's always right. Sometimes the customer is an idiot or a bully, sometimes they don't know what they want or can't ask for it coherently.

"The customer is always right" is relevant or correct in two ways. The first is that their spending decisions often contain more truth than their words ("We didn't exactly believe your story, Miss O'Shaughnessy. We believed your 200 dollars."). The second is that in a free market the customer can always go across the street to your competitor, and there's not much point in whining about it.
