I have a 3 bedroom house. I rent out 2 bedrooms that pay my mortgage. I'm adding a 4th in the basement for more income. So in short, Yes. Use it to make money.

The second bedroom allows many things like if you have a friend over or gas family and the like. It's not a requirement but I'll tell you what, I currently live in a one-bedroom and I wish I lived in the two bedroom. It's the equivalent of having a garage. You can get away with not having one but God damn is it better to have one than not.

You could always turn it into an office.

2 bedroom house is not a large house. And you need that second room for the study/gaming lounge.

I really like having a small house. its a lot cheaper to maintain and no room for cohabitation

I have a two bedroom apartment. The extra bedroom has a small bed in the corner. It is great to have room to store my fishing gear and scuba equipment.

A three bedroom might be a good idea; master bedroom for you, a guest room, and an office.
