For different reasons, a lot of times women will lie about their sex life because they don't want to look like a slut, they're ashamed of what they did on some level or they don't want to ruin a chance with a guy they consider a prize

A lot of times men will lie about their sex life to make themselves look like they get more pussy than they actually do as an ego boost to look good in front of their friends or whatever, or if they've slept with prostitutes or something like that they may lie about that because it might ruin a chance with a girl they see as a prize or they're ashamed of it on some level, guys may also lie if they are virgins after a certain age to make themselves not look lame

As far as your particular case , she was sleeping with a married man, that might have gotten to her on some level just saying lol, and there's other little cases of nuance where maybe somebody has something to lose
