What does "real" men and women mean? Since no one can define it and there is a range of behaviors that both men and women exhibit, it's a question that can't be accurately answered. The number of sexes in nature is two. The number of genders invented approaches infinity.

I dated a transgender man, a woman who felt like a man inside, pre-op. She/He/They seemed truly different from most women. She/He/They didn't want to be treated specially because we had sex. Kinda like a guy.

No. They are certainly free to affect the mannerisms and dress of the opposite sex, and to surgically/hormonally alter themselves to take on that appearance. Plastic surgery has reached the stage where it can be hard to tell the difference from the real thing. I see no reason to be unkind to such people, so long as they don't affect my freedom of speech, or expect me to pay for their desired lifestyle.

But you are who you are. Maybe we will one day have the technology to actually be able to change the sex of human beings (some other animals achieve this naturally). But we can't do it with today's technology. Therefore, transwomen are not women, transmen are not men.

To my mind, "gender" and "sex" are synonyms. If not, and one says that the number of genders is greater than 2, then that demonstrates that gender is an artificially constructed concept, and therefore not actually real, and therefore not actually true.
