You can google some cover letter templates. Thankfully I haven't had to write anything for a few years, but I would keep it short and to the point. Cover your degree, what you're interested in and your strengths (don't be generic). Also use it to bring up talking points for your interviews, ie you like poker (because of the math), you volunteer at a homeless shelter, what projects you've worked on, etc.

My two cents is that your CV / cover letter are only there to not get you kicked out of the pile of applicants. You'll do your convincing during the interviews. You want to show that even if you don't have any experience now, you're looking for some, are willing to learn and will be a good fit in the organisation (basically you're a team player, honest, a fast learner, will take direction, etc). One of the big things for me personally is that if you don't know something, don't pretend to know or guess, just say you don't know.
