A diary would be a good idea, for both the parent being abused and any witnesses who might be called upon at some point to testify. Make specific notes about the negative reactions that the children have, and write down verbatim any comments the children make that support your allegations of abuse. Also make a note of each time the abuser is urged to seek mental health treatment.

Verbal abuse can be awful, but is desperately tricky to prove. It's usually best to stand up to the abuser and see if you can't alter the relationship dynamic, if you aren't worried about being killed. Taking a really good beating that makes nice visible injuries can actually be a good thing in the long run, if it results in the abuser being arrested.

When I was escaping my abusive alcoholic ex-girlfriend, I had a camera on me at all times and when she became heated I simply turned on the camera and left (leaving only made her angrier). Video footage is the only thing that will save you from the legal system.
