Not to go off on a tangent, but consuming anything beyond your daily values of anything will have some kind of adverse affect on your body.
You drink 3 quarts of soy milk a day (who the fuck even does this?), your body is going to react weirdly maybe increasing your estrogen or something.. You eat 7 big macs a day you're gonna be obese. You don't eat your veggies you'll get constipated etc..
I drink soy milk and eat a mostly plant based diet and if anything I'm more active sexually because I'm in better shape. To each their own though.

+1 because, yeah, most people don't eat enough plant-based foods (me included sometimes). I tried the vegan thing for a couple of years and lost a lot of weight on it (not a literal 'ton' but a lot). But the main reason why (you can of course lose weight on lots of different diets) is simply because, instead of eating whatever the heck I felt like, I instead started to train myself to eat more intelligently. It's very possible to eat a vegan diet without soy. I've heard a lot of 'anti-soy' stuff out there, all that stuff about 'phytoestrogens'; I don't know how seriously to take it.
I gave up the vegan thing a while back, and instead I just try to eat moderately. Little to no junk food, moderate amounts of meat, low carbs, lots of fruits and vegetables, moderate calorie count, intermittent fasting here and there, cardio, body weight resistance training. Still haven't figured it all out.
I've been thinking about trying a few recipes that use Keto principles after hearing about its popularity, and seeing that r/Keto on the sidebar here.

I am mindful of daily calorie counts. I know my input to 100-200. My output is very dependent, but with a heart rate sensor watch I can trust it to +-400 calories most of the time. I basically aim for a 800 calorie deficit to lose weight. Most places list calories now, so it isn't hard.
It works.
I think the problem is that our natural systems for balancing our calorie load go out of whack really easily. You'd be surprised how much or how little you can eat calorie-wise and feel about the same. And you'd be surprised what a difference it makes to have been walking around town on a Saturday compared to just sitting in the car and office.
The ease by which you can eat your way into +-1000 calories of difference, and the ease by which your calorie burn can vary +-1000 is incredible.
It sort of blows the idea of fad diet inputs, as well as the notion of a treadmill, out of the water. The treadmill should only really be used for explicit heart rate targeted cardio training. Just put on a podcast and go for a 50 minute casual walk, and then add in a couple 10-20 minute walks during the rest of the day.
The only reason weight loss is tough is because of the easy variability I discussed. If you don't have cooking and eating habits, then you tend to eat in response to hunger, which causes you to make all sorts of haywire input choices.
And if you're in the office all day, but only add a 30-40 minute really tough treadmill workout, you're not taking away as many calories as you believe.
So weight loss is both difficult (complicated, hard to do consistently), and takes forever. But it's also not necessarily that hard (pain inducing, uncomfortable, esoteric).
The time factor matters too. Losing more than 1-2 pounds a week means that your fat cells empty out before they can shrink. That triggers an intense hormonal response which leads to this: once I lost 40 pounds in two months (5 per week). After a month and a half of different diet and exercise habits in between, I started eating a burger every so often. After that 1 1/2 months post losing weight, I started to gain a little, and then within 2 months I was back up at the 40 pounds I had lost. After the 1 1/2 I stopped looking at the scale everyday. It was after 3 1/2 weeks when my loose fitting waistline now saw a belly flab rolling over it that I checked and realized that I had gained about 20 pounds. And despite that, I still ended up getting the 20 more back.
No, weight loss has to be slow. Just write it out on a calendar, and plan your life attitudes accordingly. "Winter I'm going to be a fat guy no matter what, this can't change. Spring I'm going to be semi-fat, but even after 6 months it's not like girls will like me. Summer, maybe I can fit into some old clothes. Fall I can finally wear clothes confident without feeling like people will notice me as a fat guy."
It's tough because people have trouble accepting that even after months of weight-loss, you're still going to be a "fat guy", and have to do it for even more months. There's zero meaningful short to mid term payoff. That's why so few people succeed at it.

I completely 100% agree with everything you said. I've experienced that cycle of gaining/losing weight several times. I used to be much heavier, well into 'obese' territory, but even today I'm still overweight by about 13 pounds. I'd prefer to get down to maybe 10 to 20 pounds below the 'overweight' line, and stay there.
From a science perspective, and from all my past experience, I agree that calorie counts are the way to go. It simply gets the job done. And moderate exercise helps too. Only thing I'd add is that 100 calories of sugar aren't the same as 100 calories of a healthier food; that's common sense, but people need reminders of common sense stuff too. (I'm actually anti-sugar enough to think about permanently removing sugar from my diet. Fruit, sure, in moderation, but no white sugar, not even a milligram. Might sound fanatical, but I think it will work for me.) On the topic of calendar marking, yeah, when I have my act together, I weigh myself daily, and record the weekly average weights into a spreadsheet. It keeps me aware of the trend, and helps me to be more patient. (There are apps that can do the same thing, and I use the Fitbit app for that, but I've found it beneficial to keep an independent log too.)
People might find it odd, but I think weight management is something that 'monk mode' helps with. I've been reading about the early Christian monastic traditions. One of the reasons they focused on fasting is because, if you can control your appetite for food, it is easier to control your other appetites. I found these two quotes interesting -

Don't know if I'm cut out for all that monk stuff just yet. I have a tendency to curse a lot worse than a sailor, etc, so I'd make for a rather unusual monk until/unless I can get things like that under more control. But if my version of 'going my own way' is kinda 'a la carte' then I guess I get to pick and choose LOL.
People might associate the word 'fasting' with excessively long periods of no food (days/weeks), but not necessarily. It's just that in many modern civilizations, people have such ready access to such cheap food, it's all too easy to overdo it. If you keep eating until you are full, you probably ate way too much (source - many horrible past experiences); by contrast if you stop eating when you are still hungry, you're probably fine. Eat to live, not live to eat. But I'm tracking my calories too, because the numbers 'keep me honest.' At first it's a pain to track calories, but after awhile it's much easier. Now when I cook some types of food, I split it into 260 calorie portions in plastic bags, freeze it, and then I can easily re-heat it at work/home/etc and easily know the calorie count. Takes some trial and error, but much cheaper and space efficient than buying a stack of frozen meals at the grocery store.
I'm still figuring this all out! I have not come anywhere near to figuring it all out yet. But I gotta say that r/MGTOW has been one of the most positive new influences in my life for a long time. It has pointed me in a lot of worthwhile directions. The people here are a great and helpful resource.

I drink plenty of soy because I am lactose intolerant and I go to the doctor every year for an annual checkup and I am totally fine, even my testosterone levels are great. I asked my doctor about soy and he told me that soy contains phytoestrogen i.e. plant estogen which doesn't work well in humans as humans are animals. You need to have extreme levels of soy in order for it to have any feminizing effect. He suggested that my being lactose intolerant may play a role in having high testosterone and low estrogen because dairy milk is high in estrogen. Regardless, I am trying to drink more almond milk and coconut milk now.
