Don’t read into it to much. It’s been falsely spread that the top 1% earners is even somewhat common when it’s not. OF has been flooded by girls who use it as their onlyplans in life and so 99% of them aren’t making even $100 a month. As for why anyone pays for that stuff, I don’t know because I don’t understand those guys who do.

There has been a rising interest in 'amateur' porn, and I think a lot of that is because people get to feel like they're experiencing something more real. Even the 'gonzo' porn can feel scripted with people saying ridiculous porno dialogue and such. Even non-porn stars can take off because it gives people the feeling that they're looking in on that 'girl next door'. 4chan's board /b/ had (until a recent moderator change) become almost entirely about sharing local 'wins', nudes that users would get from local girls they knew personally, with 'area code threads'. The allure is that it gives you the feeling that you might meet one of these girls and already know them sexually.

onlyfans gives you a little bit of 'interaction' with them as well if I am not mistaken, probably why snapchat took off. When you try and suggest an idea to a porn studio it goes to some old guy, but when you send it directly to the porn star you know she at least rejected it herself and get to enjoy the idea that shes listening to you on some level.

And of course porn stars are going to make more money than on real porn shoots because they are cutting out the middle man. They get to be their own producer, no money goes to the producer, the camera man, the editor, the website, its just all you with a single camera angle.
