Try to keep hand gestures at the waist or below.

When standing, if you don't know what to do with your hands, do "The Cowboy" pose, where you hook your thumbs in your pockets and sort of frame your crotch. Another option is to hook your thumbs in your back pockets. This has the benefit of opening up your body language (don't cross your arms unless you're doing it to mirror someone).

Be sure to take up space with your hands- and your whole body, for that matter.

Touch people on the back as a greeting, it's warm and friendly but if done right also assumes dominance tactfully.
