Don’t trick her into admitting she gave you a fake number. Don’t give her yours either. Say “what’s your number?”, input what she says into your phone, text it a day or two later. Then move on. Maybe she replies, maybe she doesn’t. You’re too busy to dwell on it.

First, stop asking for numbers. Tell her to give you her number. It could be as simple as "We should hang out, give me your number. Give me your phone." Show dominance.

Second, take her phone, use it to call your number so she has your number and you have her number. Then put your contact info in her phone as "Cool Guy from Starbucks" or "New Guy you are crazy about" or "Guy My Mother Would Love" or whatever so when you text that is what pops up and they chuckle.

What's the point of manipulating the situation to get the correct number...only to have her flake cuz, you know, she's not interested?

You can always text yourself from her phone.

You are also putting the number on the pedestal. If there is a rapport and something to relate about, right then you should suggesting a future meetup, instead of waiting for 'bye'. About the time she's laughing is when you get her number.

Comes across as way more confident and less needy.
