Echoing the other poster, I would say this is an opportunity to let her know what you like. Let her know that you enjoyed this, and didn't enjoy that. You are not in a relationship with her, so you are free to be completely honest. Often the insecurity stems from the fact that she did not enjoy it as much in bed, so she assumes that you did not enjoy it either.

I get the feeling that this stems from her insecurity, but mostly because she is thinking too much during sex.

Try taking complete and utter control in the bed. Tell her what to do, guide her. If you take control she will think about it less, and when you are finished tell her how fucking awesome that was. Tell her that 'I think that was the best sex I have ever had'. Act all woozy and out of breath.
