So wait a day.
They NEED to feel chased, and it's your challenge to express interest while at the same time not seeming needy.
You've brought up the subject of coffee. After your next class together (NOT before or during) approach her, make eye contact and say, "I'm going for coffee at X at Y time. You should come."
She has to say yes/no at this point. If you get a "maybe" OR you get an excuse without an alternate time, it's confirmed that she's not into you. Respond with with "maybe some other time, then."
Then don't ever follow up. Because she's not into you.

Perhaps I misread. A lot of the context is HOW she says "maybe."
Only you know what kinds of nonverbal was going on at that moment. good advice by fnordsnord.
What's a good maybe?
I sensed a lot of anxiety on her part, which means she was either creeped out, interested and nervous, or something else.
If creeped out, why give me her phone number?
If interested, why not agree to meet?

Great questions. Except the wisest man on the planet could never answer them. Women behave and do things for all kind of reasons other than what makes logical sense.

Escalate without asking.
"I'm heading out for coffee at 8pm, I need to go over X from class"
If she says maybe or I can't, her interest level is low and she gets a soft next. If she counters with a different time then she's interested.
Simple formula really.
