Rigorously speaking, a shit test is something a chick gives you to assess your value. The label used to be reserved for something she did CONSCIOUSLY, but now it's used to refer to anything that will allow her to assess your value, whether she's consciously trying to assess it or she'll just be able to do it because of something else she did for different reasons.

In your anticipated scenario it'd be a conscious one, "I want to know if you're sex starved because there's something wrong with sex starved men, otherwise they wouldn't be starved". But it's more often unconscious, "I want to fuck you but I don't want to feel cheap so I decided it won't happen today ok?".

Either way if before a date a chick says "we are not having sex", you can rest assured she's considering having sex and you'll get laid if you don't fuck it up.
