Lol, at a coffee shop they generally approach you to order some flavor of the week cup.

You're job is to be witty/funny in order to get her attention; no easy task.

If the idea of having a normal conversation with a pretty girl (when it's your job) then maybe start elsewhere.

You should be excited at the prospect of talking to and connecting with the hot girls who come into your workplace. Be professional, don't take it too far, just be very friendly and on the borderline of flirting, until it's reciprocated. Basically let her take the lead on taking it further into overt flirting, but offer her the opportunity. You're allowed to be a human and flirt with your customers. You just have to be WAY more calibrated and use your social intelligence, sharpen it, so that you don't make any of your customers uncomfortable.

Get a job as a barback, basically a bartenders gopher. Refill ice, restock beer in coolers, grab new liquor bottles and occasionally you get to make a drink. But there's a lot of downtime.

You won't get to interact directly with the customers, but you'll get to see a lot of interactions. This is where you can observe "in the wild" approaches, attempts, and most importantly body language. This will help "read" when you approach yourself.
