Look, your particular issue is not the details.

You ask about them again and again and you're repeating the same questions.

There's enough writing and posts on this that you've read over the last few months alone, that you've had this question alone answered multiple times across multiple threads.

The issue is not that you have no idea what escalation is.

It's confidence. And lack of experience because you aren't really trying yet.

Like you start off by suggesting that maybe sometime you guys could do something, maybe on Sunday. And then you wonder why they flake. It's because using that much uncertainty might feel like you're giving her an "out" but it also makes it seem like you either don't think you're worth hanging with, or like you lack the confidence to just be more specific.

Taking breaks is a necessary part of escalation.

You start off testing in a variety of safe ways like I've described before, and she'll respond well if she likes having you close. She'll respond well to touch. Or she won't.

The fact that you'd be starting off without touch, by testing her space bubble, is important.

But after that, once you've started touches of any kind, taking some time to step back and allow her freedom, is important because sometimes girls don't feel comfortable to reject clearly while a guy is doing something.

So even if it seems to be going well, back off every now and again, and see what she does. If she is fine with it she'll stay where she was and wait for you to come back. She might even just follow you and re-establish contact herself. (I remember one time I was watching movies with a girl and I edged away for some breathing room. She responded by edging closer and re-establishing contact.)

Or she might pull away or re-establish her own boundaries more strongly. Either way, you'll know after she makes her choice.
