Honestly, you don't even know what you like, and you'd be surprised how much more attracted you are to someone when you actually get to know them a bit and establish a connection.

To be more cynical, if you aren't willing to aim low at first then you'll never be capable of shooting high.

And why do you think hot women are out of your league? Looks don't matter as much as many guys on Reddit believe as long as you're not on the extreme end of the scale.
