well if the guy was friendly and did it in a cool way i would just say thanks to the dress one, for the ethnicity one i would make a guess, for the young one i would say yes, and then they might ask how young. either way after i approach i will just walk away cuz i just want to practice talking to strangers

Pick better ice breakers. The dress one is okay. The other two are weird and without context.
Better ask them for directions to some cool coffee shops (you don't trust reviews online) etc. Then you can ask further questions about pricing or variety of drinks. Then you can bounce off

The girls being like “why is this random guy talking to us asking this random questions?”
You should just tell them what the heck you want right away to avoid the girls feeling confused about what you are doing there.
This is much better than asking random questions for no reason to strangers, as it removes the confusion.

If a person came up to me and started asking random questions for no reason and without any context as to why he is asking me specifically, i would be so uncomfortable.
Like who the heck goes around asking “guess my ethnicity” to strangers… So weird, and uncomfortable. I would think they want something from me and are trying to distract me somehow.
What’s the problem with simply saying “i’m trying to socialise and meet new people”
