I try to take her on a instant date if possible, most dont expect it and it gives her something to talk about with her girlfriends later. Also it's a big time saver.
Failing that I take her number cause it's more direct. Instagram is just joining her fanclub and snapchats can get buried in the notifications.

I've started asking "What's the best way to get in contact with you later?" and let them choose. If they are interested in you, they will respond on any of the platforms.
Lately, it's been mostly Instagram. Phone texting is the second most common. I don't have snapchat.
Also if they say they don't have any social media, then they are not interested and just move on.

Instadate is priority number one. You have her attention right then and there, so strike while the iron is hot.
What do you think is gonna happen if you do a drive-by interaction for 5 mins and the. get her number? You just become a set of 1's and 0's, an NPC, a non-entity.
If the instadate ain't happening, then getting her number is warranted. A phone number puts you in the list of people she has vetted in her mind. Insta/Snapchat is basically the "Fan-Zone".

I'm quite surprised that you guys keep up with this social media stuff. In my experience girls without social media have a far better personality and try to get into you as a person. I would always go for the number first (since I deleted all my social media stuff years ago anyways).
You may call me stupid for that, but when i checkout some sort of tinder etc and the girl has literally 1000+ pictures on Instagram, this is an instant deal breaker for me. I don't need this self promoting narcistic stuff. But to each his own I guess.
EDIT: To answer your question: Get the number first.
