Is anyone else, just, on base, irritated by the phrase "plus I don't know you well enough yet [to get coffee]." Like... isn't the whole point of getting coffee to get to know her better?

I think you could agree and amplify. Something like "Yeah, I don't know you at all! Isn't it crazy that we have that kind of connection that we can just go get coffee?"

I agree with your analysis though, probably a rapport issue... I think that's a really lame response though.

Pretty much answered your own question. Perhaps you should also look for more of a connection, when she realises you can relate to her passions and interests, she will likely be more willing to do something with you. Also you might want to aim to do something justified based on your conversations (ie. "Do you like pancakes?" "yeah, I love them" "great, because I know where the best pancakes in the world are" YOUR PLACE)

If you just tell some one that they're cool, and you should get coffee, if it works, it's a greater reward, but lower success, where as if you can justify, you have a higher success rate. Just keep that in mind for future interactions.
