This is really the key. If she had been strongly attracted to you, she would have seen the joke as a fluke and ignored it. She was instead probably already trying to figure out how to eject and your joke gave her an easier exit.

But, once you're already in that situation and trying to salvage it ...well, just first recognize there most likely is nothing to salvage, and then respond to the joke almost as if someone else said it. "That's awful? Who says something like that?"
