You work with her? Also, did you get ghosted (nothing mentioned in post)?
Getting over oneitis is simple if she's NOT a coworker: delete her on anything social media, her number, get rid of anything that reminds you of her from your room/house/car. Start flirting with other girls and begin the process of moving on.
If you do work with her: quit being around her, request a different shift/days of the week from HR, flirt with other girls to continue to get her off your mind.

It’s not that I need to move on. We’re still on okay terms and we could continue hooking up (which I want to do) but my idolization of her is causing me to do needy things, making me needy which is both bad for my mental stability and makes me less attractive

Its good that u noticed early. An easy way to seem less needy is to talk to multiple girls, continue talking to new girls and always some more plates spinning. Then u will be less focused on this girl in particular and u will be less needy. Wish u the best bro

Yeah, I'm dealing with something similar myself.
When I started working here, she was just another pretty face, then the flirtation started. That's when I thought "shit" and now I think about her almost the whole day.
The suggestions I proposed are just what I would do; again, good luck, man.

Even if I was looking for a long term relationship right now, which I’m not, the problem is not about me being stuck on one girl. The problem is more that I idolize this one girl and think that I will never do better then her, thus making me needy and such
