Ask her about the class. Can she explain something you missed? If you missed a day, ask for homework/notes. What's going to be on the midterm.

If you in a class, you have a built in topic.

I once had a professor who looked at girls boobs with no tact whatsoever. Only 30 people showed up to his lectures (out of hundreds of students). In a case like that, I might have said something like "Hi. Look, he's looking at her boobs."

Some people always have something witty to say. Sometimes you need to start a conversation before you have any material to work with. If you have nothing to start with, say hi and move on from there. Maybe something will come up, maybe not. Either is better than not saying hi, though.
