My interpretation:
She Probably doesn't feel like going so she came up with valid reasons. But is considering your feelings so she's probably open to another date.
If it were me, I'd play it cool and I'd just invite her for a drink in a few days

Yes agree, in fact I'd respond okay np hope you enjoy your Christmas. It lets her know A. You're not bothered or pressuring her with a follow up, in fact the balls in her court and now she may think, oh no Did I scare him off?
Either or wait at least 3 days to follow up with drinks.
I will say you kinda got bad timing with Christmas so don't worry too much, may just need to wait until after

Thanks man - problem is I will be going on vacation for 2 weeks after christmas then shooting a movie for the next 2 weeks and probably won't be available until the end of Jan. We had a good connection on the first date so I don't want to "lose the momentum" so to speak.
I was thinking of just setting up a lunch/dinner/coffee date for next week sometime - maybe text her mon / tues and then see where she lands. don't want to come off as too pushy or aggressive though.

It's not a straight rejection. This is in the very gray. She shows interest and tells you that she is grateful you thought of her.
Never come with an alternative. If you were busy with stuff and someone was pushing their agenda on you how would you feel even after you politely told them you can't.
In my opinion, key is to stay cool. Tell her to have a nice evening and that you hope her shenanigans won't be too much.

There's only 2 outcomes about her version:
1- she is telling the truth and she really can't tonight. 2- she is lying and she is trying to reject you nicely.
None of theses suggests that coming with an alternative would be a good idea.

I really liked the section in Models about this assumption: if you assume that women never play games, you will subconsciously weed out the ones who are playing games by taking them at their word. That way you get to only make an effort for the ones that prove their interest

Generally , if women are interested in you, instead of flatly said "no", they will offer to do something else later.
