What is your goal? Getting a virtual girlfriend, or pen pal? Did I miss out the point where you wrote that you actually were on a date with her?
Reward her with asking her out, then reward her hopefully good behavior, by escalating until you can reward her with your dick.

Some context: she goes to college out of state. We talked for 7 months during 2016, and we managed to have one date in the small window of time in which she was home (she was away for her summer and fall semesters). We hooked up and everything went smoothly. She’s graduating/will be home in May. (Also, we are planning on seeing other each before May, her coming home once and if all goes well, me going out there once)

If your friends or whatever, isn't friendship giving your time to one another? Obviously your time is valuable and so is hers... You reward her for calling you? You sound like an attention whore, jerk and you sound like you're just using her. If you have no interest, be a man and say so.
