Personally I find this a lot easier if I talk to a few different girls in quick succession.

Well, what I would do is ask questions and sound interested. Let's say a conversation starts about the music being played. You can then ask her if she likes the music and maybe make a joke like is this the music you'd work out to or have in the shower. Something like that. So ask a question, make a statement and repeat. Sometimes bring in stuff about yourself too, and if she asks you things answer them and extend on it.

Ok, so you know how an interview is like "I need to know this and this and this, and then I'm going to judge you"?
Small talk is more like "Look man.. I'll tell you about me, you tell me about you, and let's just enjoy each other."

Rather than going in a straight line, you're both just kind of bouncing around from topic to topic. It's more of a game than a logical conversation. Go into the full range of emotions and the full spectrum of human knowledge. Make em laugh, make em uncomfortable (but not for too long), make em feel awesome, make them feel ridiculous, make em feel intelligent, make em feel dumb. Always keep your tone accepting and tolerant and you should be good.

I'd say if there was a goal, it's to feel out the other person's comfort and interest levels on different subjects. Think of them like a blank canvas that you have to fill up. If you like the picture they're painting, fuck yeah keep on truckin. If not, no worries, just politely move on and it's all good.

To find good topics, there's a few good approaches I like.

First is just the generic stuff. It's good for a starting point, but don't stay here long because it's boring for them. Where you from? You in school? You been here before? What kind of stuff do you like?
Then another approach is good for 1-on-1's after some good rapport building. Make a list of passions you're into at the moment, or have been in the past, and then see if they want to hear about it. When there's a decent sized lull, I'll just blurt out an excited "Oh dude! I've been getting really into Muay Thai lately." Gauge their interest and go from there. Either expand on it and teach 'em stuff, or just find another topic.
Another good conversation tool in general is to memorize the acronym FORDEN. Ask questions from here and you'll never run out of stuff to talk about. FORDEN stands for Family, Occupation, Recreation, Dreams, Environment/surroundings, and News.
And lastly, which is the most fun for both of yall, just talk about whatever the fuck pops into your head. Lower your standards for what you consider "acceptable conversation" and just think out loud. Ask them a question, let them answer, then say what you think about the topic (or about their answer), then ask them more about their answer if they're liking the topic. Would you ever be a cop? Do you have any tattoos? Would you ever kill a man? (Have you??) What would you do with the body? Would you do genetic engineering on your kid? Do you like the Black Keys? What do you think those people over there are thinking about? Have you ever been in a fist fight?
