This isn't the best place for LTR advice. You can always speak about your problems with your girlfriend. What matters is how to talk about your problems. Don't be a whiny boy and don't place the burden of these problems (literally or emotionally) on them.

When should you just keep the problem to yourself vs telling it to your SO?

This is way too broad. Can you give an example? In any case, speaking broadly:

Concerning your own personal problems that don't directly concern her: There's nothing wrong with venting about your day, as long as all your interactions aren't dominated with you bitching about your day. No man is an island and you should be able to share things with your SO.
Concerning problems you guys might share within the relationship, you NEED to be in communication with her about these things. End of story. If something can be solved, then you solve it together. If something can't be solved, you try to compromise in a way that benefits both of you the most it can, or avoids the most penalty to both of you. If compromise isn't possible, then you might be looking at a relationship ending problem. Good news is, with people being willing to work on a problem, most problems are conquerable.
