I understand what you are trying accomplish, but it won't work in this case.
1) She is waiting for you, so she is not in that state of mind of being picked up. Most likely she will be scared. But you can pick her up and spin during the date especially if you see she is in playful mood. It will work wonders. Make sure that environment is loud and energetic. Don't do it in a fancy restaurant. Bar or dance floor works well.
2) Make sure that she has proper clothes for this stuff. Mini skirt is fine, long dress - no. Also check if she likes it. Most girls likes this stuff. But if she is very shy, then she won't like it
