I always let people speak of what they like and what they want to speak about, I listen actively and repeat what they say or ask new questions from what they've said.

For example, not so long ago, I met the husband of my cousin, he has a phd in biophysics, so I just talked about biology with him, what he was working on and asked him questions about advanced stuff in biology.

We've gone very far and he seemed to really appreciate the conversation; I don't think he could speak about that kind of stuff with her wife who knows nothing about biology

That's why it's important to have a large culture and read books, so you may have conversation subjects with just anyone.

I'm a software engineering student but my readings about biology made me much more knowledgeable than others sofwtare engineering(or any field without biology) students

Are you talking generically, or each person on here?

For me personally, incredibly broad range of life experiences from travel (not club med, more like gorilla treks, thai massage classes, host family foreign language experiences), unusual hobbies, I'm a pilot and sail for instance, and lots of varied work experience. All of this means I can connect with people on a topic they are interested in, something they do that we share, rather than try to get them interested in my stuff.
