Fair enough. If I got something like that, I'd probably say "who said it was a date?" The thing is, that's only appopriate if she said it flirting-ly in the first place. If she said it as a rejection, you've done something wrong up to that point and you're SOL. Thinking about it at that angle is a problem in itself. Why do you need a smooth reply? You're done - on to the next. Think about what you did wrong, and don't do that thing again.

Depends where you are in the interaction. If you just met and she's discussing dating in general, ignore it. Giving it too much credence and trying to convince her out of it will bust you out of your frame. If you've been trying for a while and she's said this, 99% of the time you've already lost her. Doesn't matter what you say.
