One "i have plans this Saturday" and you're running here asking if you should forget about her...Why don't you talk to her and get to know, see what she likes etc and then try to schedule for a day she doesn't have plans?

Lol, this classic situation.
I mean, this can be very situational, and sometimes they could be genuinely busy that they can’t meet up with you, but if they were interested in you or even wanted to be a genuine friend even (lol) they would’ve made time for you anyway. This is just another nice way of rejecting someone’s advances, and fair play.
Also you may think things are going good, but don’t assume that they feel the same on their side, maybe it ain’t going good for them and they could be hiding it.
Honestly, drop the conversation but do it in a way that’s doesn’t seem odd. Like continue talking until it feels right to end it, then just end the conversation and don’t talk to them again.

I believe that you should drop it but not like you're upset. I would take it as a rejection and casually walk away.I was in a similar situation. I asked her out (nothing fancy) on a thursday and she said that she had other plans. However after I said "ok" and was ready to leave it be, she suggested we choose another day.
edit: I have met her in person, she looked interested and then I chatted with her online. I do not like starting online conversations unless I clearly see some form of interest from her.

It’s not good to ask her if she wants to go out, it’s better to say something specific and exciting you will do that makes her jealous and then invite her to join.
