I think this is kind of neat. I don’t think it’s unethical as long as you keep it light and friendly. Its true that many women are spiritual; a lot of ladies are into horoscope stuff these days (not me personally, though). If she wants to have her palm read and you’ve done a teeny bit of research about it so you are more knowledgeable, maybe you could ask her about her star sign? You could always say that you’re not sure if you believe in it or not but that it’s good for getting to know someone.
Very creative way to break the touch barrier, good job :)

Haha so true. Women are varied people, you never know what topics and beliefs they will have! Like for me, I’d say I’m “spiritual” because I believe in souls, an afterlife, and reincarnation to some extent. But I don’t really believe in horoscopes, astrology, tarot, palm reading etc. I think it has merit and value, but my beliefs don’t personally include them.
Astrology IS really common though. I read a joke somewhere; the stock market is like astrology for men haha

That's a good way to build rapport too. Have fun and keep it clean.
Being "on a date" with someone means that there are certain customary ways that dates carry themselves that involve very basic "on a date" together touching:
Hand holding: This doesn't obligate anyone to anything other than signaling the room that we are "on a date". I extend my arm so she can hold or wrap her arm under my forearm while we walk. It's really a custom to do so. If you don't, other people might interrupt you two.
Hands to myself when I'm driving, but it really depends how far we are in to the date. Sometimes she'll still enjoy holding on to me while I drive. I really don't press for the awkward thigh grab, like its anyway to impress her. That's just me. Her seat belt has to stay on. There's also this "purvy driver vs captive passenger" element. It's not like she can go anywhere, so as uninvited as it might seem, i just wouldn't come on that strong while we drive. She might....she might go ape shit, too. She might take her shirt off and expose her breast to everyone outside the window. You definitely don't want to disturb her.
Also the type of date really defines how much touching and escalating is appropriate.
Other Dating advice suggest a first date actually be really brief, like ten minutes to half an hour. Just to meet for a moment and see if there's mutual attraction, and then decide if it's going to be worth a second date where more touching is involved.
