Makes sense. In combination with her being self-reflexive it seems quite genuine. Still could be half-truth. But you cannot know.

Not funny for me. Seems artificial. But everyone is different.

“okay let me know when you want to make plans”

By saying that you roll the ball over to her and create the impression that you are very focused on meeting up again as soon as possible. Both is not good.

What I would write: "Okay, I understand. Wish you a nice stay with your parents."

Wait a few days, focus on other things and people in the meantime. Then you contact her again, but you do not immediately try to set up another date, instead create a lighthearted conversation, that will eventually transition to setting up a date.

Translation: She isn’t into you. She is blowing you off and wants you to realise that with other guys she wouldn’t be this flaky, but with you she is. Because she isn’t interested.

So it doesn’t matter what you do, because it won’t happen.

You can say, “ok I understand, nice meeting you though, hope you find what you are looking for”

And just move on
