Woman here. Definitely tell her if you are cooking together instead of going out. What activities the date includes will influence what she wears, so she'll appreciate that.
Either having things ready or cooking together would work, but I do think you making dinner for her the first time and then cooking together on another date might make an even bigger impression.
Once the relationship is definitely heading to a physical place, a date cooking foods that involve a lot of hand play (pizza dough, pie crusts, etc.) can be very tantalizing.

Every woman is different, so it's hard to say. If she's the type who's been planning her wedding since she was 9 and already has an album of photos of what your kids might look like, maybe. I think, though, that it wouldn't be too serious for most women.
If you've already slept together, starting with cooking together versus you making her dinner yourself will probably work great.

Your idea is ok, however you're trying too hard... and omeletes in the evening is not my idea of a good meal. Personally i'd do 2 pounds of shrimp (with the skin on you want to see her get down and dirty) cooked in a pan with a little garlic, butter some basil (fresh) improvise... with what you have in our house, no need for a special trip to the store Make it look like its no big deal you can handle it. It would be good if you added something fresh.. salad or asparagus etc...

what? Making omeletes isnt even trying... seriously, your suggestion screams "LIKE ME LIKE ME LIKE ME!" like no other. You're cooking for her, you're already trying. Swing for the fences.

Invite her for breakfast if you want to make omelettes.

Now we're thinking, the OP has it backwards.

You only eat good food to impress people? If he chooses the meal with little or no input from her and proceeds to prepare it from memory, it just comes off as if it's part of his normal repertoire.

Whats that even mean? You're cooking for a female, no matter how many ways you cut it up, you're seeking approval. It doesn't matter if you're gonna do it all nonchalant, you're still trying to impress her by showing her "hey chick, check this funky shit out.... yeaaaaa i cook like a bau5" Most meals within the guy community that takes little to no input from the women are pre-frozen.

I agree with wasappenin on this one. Make something more creative and more interesting than omelets. If you want to make something that's not as time consuming (like eggs) you can always make some form of pasta if you both enjoy it. I think pasta is a prime example because you can make dishes that seem very fancy is in reality very easy to do. You can use your choice option to even DHV. If you create something that is unique and awesome it will reflect very well back to you. Best of luck on your date!

I'm not sure how you set up the dinner date so.. yea. Anyways, my favorite way to set up a day 2 or 3 date is to say "Hey, I'm cooking Xday and pairing it to wine. You down?" Never get turned down unless it's logistics. During the day I'll find time to make some sort of homemade dessert for later and surprise them with it. Dinner is usually something simple, but delicious. For example, last night I cooked up lamb with steamed vegetables. Dessert was cheesecake I had made from scratch.
Now, before the keyboard homos come in and scream "trying too hard", I love to cook. I make things all the time that I haven't tried before and use these dates as a reason to make em.
PS. Women love homemade cheesecake.

Not trying to hard at all. That sounds balling.

There are these prrseasoned Lamb patties at whole foods. 2 for $5 and they take 6-8 minutes total time to cook. Absolutely delicious.

Make sushi together. that shit is awesome and she'll be impressed if you can pull it off. Watch some youtube videos if you don't have a clue.

Buying ingredients and cooking together is a great idea. Not omelets though.
Egg salad sandwiches.
