I would stop texting her, unless she hits you up first, until you got back to school. It won't be weird, she remembers you, you remember her. Just wait until the morning after you get back, and call her.

Don't be too into a new girl when you're supposed to be home for break with friends and family. You can call it game, I call it enjoying time back home with friends and family while you have the chance, which is a much more valuable trait.

I would chill out and check in with her after the winter break. Unless, like dj_bizarro said, she hits you up first. Start off with "Don't tell me you forgot my name again" or something of that nature. Ask her how her break was and what she did blah blah blah. Even better so it over dinner, then take her home and bang her.

Like dj_bizarro said, basically the best option is to wait till after break unless she texts first (and even then, I'd probably ignore her unless she texts multiple times in a row). She'll definitely still remember you, and she'll assume you had an awesome/busy time over break, instead of assuming you were constantly checking your phone and/or thinking about her. Showing interest in real life is a lot different than showing interest through texts- and you generally want to avoid that altogether unless you're sexting or you know exactly what you're doing.

Edit: Basically, if you know how to sext or otherwise build attraction over texts, then do it. If you're not sure (and simply posting this question means you aren't sure), then avoid it. There's a good chance you'll build attraction by not texting at all, whereas there's a pretty small chance you'll be able to build it through texts.
