Passions and vulnerability. The more personal it is, the more interesting it is. For both you and her.

If it excites you, talk about it. If it scares you a little say, talk about it. If it's something you're curious about, ask about it. If you're afraid to talk about something because of social etiquette, talk about it anyways, but you can preface it with something like "I understand this might make you uncomfortable, so just let me know if you want to change subjects."

I always tell girls pretty soon that I like pushing boundaries. Usually right after I've surprised them with an honest question. It's just a part of me. I let the other person set their own boundaries and I push and push and push until I find them because I'm a very curious person. I recommend it. There's no way to tell someone's boundaries until you've fearlessly pushed your way to them.

Never make fun of them, always aim to help. If others make fun of them for something you've unearthed, stick up for them and give them social validation.

stuff in the news tends to be interesting as long as its not the scaremongering bullshit that is broadcast in the US
