We met up a couple of times and she liked to reference me as a boyfriend or like a couple. Even used my phone to post on snapchat saying stuff like I think I'm falling in love.

Couple things:

She used your phone to post stuff on her social media accounts or on your accounts?
Either way, this is rather intimate and personal, posting things that intense and using your phone to do it. Sounds immature.
How long have you known this girl? And when did she start appropriating your phone for this stuff?

But yesterday she would said stuff like I think I'm going to be single for a couple of years. What is she implying??

She's not implying anything. She's literally showing that:

She's contradicting herself.
She's immature.
She's playing games.
She's fickle.

Granted, you've left out much information like how long you've been involved with her and whether there was a precipitating event that led to her being upset with you.

But off-hand, I'd say get out of there, OP.
