Perhaps it is not the coffee date that is boring but the girl herself? Date only girls that excite you.

How much of that texting is necessary? I text a lot when I first get a girls number, but after the first date I find it's totally OK to make texting mostly for logistics.
I don't understand your question.
If you're trying to date 6-7 girls at a time, you're going to be busy. If you want to spend less time dating, I think your only option is going to be to date less. Or put less effort into some girls.
Just be straight up. "Hey, I've had a long day and am pretty exhausted. I'd still love to go to that show with you, how about we move it to thursday?" That would be a fine text. The honesty will be appreciated.
Open mics, comedy shows, rivers/parks/monuments with a bottle of wine are my go-to's. Your best bet is going to be walking around your town during the day and keeping an eye out for posters advertising upcoming events. Lots of them are free.

So before I've had the "nice guy mindset" that I focus on one girl at a time. I've had mixed results and I think because of only focusing on one girl at a time I've come across needy.

Well I shifted my mindset and decided to just start game multiple girls at the same time.

This is a great thing to try. Just realize that it's very likely that you won't fix this issue of neediness. Just spread it out over multiple girls.

The result can be that when things go south with one girl, you may lose multiple leads/girls at once. Just be on the lookout for it.

But how do you guys handle it? I feel like it eats too much of my time and I feel a bit overwhelmed. I've already got 6-7 girls setup with dates after week and a half of my mindshift change.

Take notes or keep a spreadsheet in a PRIVATE place that no one would stumble upon it. Nor a place that someone would find if they were snooping. (Wouldn't want to forget about it and have a GF find it later.)

Yeah. I second the notion that texting is just for logistics. Just some niceties and setting up the meet. Of course if something nice takes shape, then go with the flow: don't be a slave to some rule.

Yeah, don't do that. Save a day or two for yourself. If only so you can have an easier time keeping everything straight.

Nothing so crass. I prioritize by feel. Ranking sounds kind of ridiculous. If I'm as busy as I wanna be, I just don't take any more on.

It's often easier if you aren't dating girls who live in the same neighborhood. Or from the same circles. Just common sense but funny how tempting it is for guys to think this sort of thing won't come back to complicate their lives later.

I don't waste my time making a date that I'd flake on. That's rude. And again, a waste of time.

Work on your conversation skills. And scope out different venues. On your list, there should be at least 3-5 decent daytime places and 3-5 nighttime places to meet a girl. Qualities of venues on the list?

Cozy, comfortable, and safe vibe. Warm lighting, comfortable seating.
Good menu for drinks/coffee with maybe dessert or appetizers that are worth eating if one is hungry.
Some specialty on the menu that they're known for in the area.
Privacy. Not a place that has the whole world walking by looking at all the patrons.
Not a place where it's easy for some dude to squeeze between you and the girl. (As simple as having booth seating.) Or just doesn't have the rep of a meat market.

Any inexpensive date ideas to keep myself entertained and still entertain the girl?

It's just going to add up a little here and there. Coffee or drinks is about as cheap as you'll want to get. Unless you want to have a hike or walk in the park before or after drinks.

One thing though: Doing the coffee or drink date with an option for more that night, is a good way to go. But do you have a contingency plan for if any of those meets go well? But have another option you're going to go to, like dancing, pool, whatever, and then invite her along if it's going well.

I mean, of course jump to your place if possible but sometimes it might require an extra jump before someone's ready to jump to your place.

If you know your days off that week, just start planning 3-4 days ahead. I hit up the one I wanna see most, and work your way down. If you get bailed on last minute, ask the last ranked girl out last minute.

Also, if a girl bails on you last minute and she has a good excuse, give her one more chance. Anything else just drop her. I hate people who waste my time. Its the most inconsiderate thing ever.

I'll go have sex twice in a day with two different girls if I have the opportunity. Just tell her you have work shit that popped up. If you value her at all, assure her you will reschedule. (girls that are bailing on you for legit reasons will most often do this)

- You shouldn't have to worry about this problem. My first dates are always at a not crowded bar. In fact, the same bar (lol). If something gets boring its one of you guys' fault. Focus on developing sexual energy, escalating, and don't forget to change venue. You're with a woman (I presume you think she is hot). How this can get boring baffles my mind. Unless you've been with like 300 women and new women bore you, focus on being present with her and enjoying being with her.
