If it takes her days to reply sometimes, she could be caught up with school work; which is also why she tries to bring the conversation back to school. Has she been in relationships before? Since she said she’s generally interested, set up a date with her when you’re both free and go from there

What?! NO. Dude...what? You would essentially be asking her if she wants to be your girlfriend after talking for two weeks and going on zero dates. You're being needy and you're seeking validation. You said in your other comment that you kind of asked her out already and she said she was interested. Just ask her out and actually set a date this time. Be confident! You can do it.
