Don't go to a restaurant on a first date.

Go have a coffee or walk in a park, but don't invest that much attention and time when nothing has happened yet, and you're likely not sure about them yet either.

I prefer next because it allows for better touching, flirting, and same field of view for conversation. Though, it's only good if you guys are getting on. This is why outdoor movie parks and exhibitions need to get more popular.

Next to you if at all possible so incidental touching is more likely to occur and she'll become comfortable with your in her space that much faster, not to mention all of the on purpose touching you can do (haptics escalation, aka kino).

All that being said, dinner is NOT a first date location. Keep it light and meet up in the afternoon, early evening for something like happy hour. Dinner is something you do as a treat when you're already dating.

1st date, opposite. Basically if you're on a 1st date, you're 1/2 way to banging her already, objective is "don't fuck it up". social convention is to sit opposite, so sit opposite. Once you're both a bit drunk, if you're in a bar, then sure sit next to, get close, kino, you know the rest. But for eating, opposite.

Across with your shoulder to her, with a open body posture toward the whole environment. Ocasionally turn your whole body toward her to encourage sexy time stories or her being open, just remember to disengage to the non exclusive body posture after a while.

I can not discourage enough to not go for a completely static first date, it is boring as fuck and sets you up the "we're dating" path where you have little to not control of the dynamic. Do use food venues as a act 2 or 3 within the first date but not as a main event.

At a restaurant, across at a table, next at a bar, but the bar would be a little weird - if you know a place is busy, make sure you have a reservation. Poor planning will reflect poorly on you.

If the date goes well, she'll want to spend more time with you. Take a walk in park after, and sit together on a bench. Perhaps after getting some ice cream.

I prefer dates where we're standing doing stuff (ex. Shooting darts, pool, bowling etc.) And if we should sit down then it'll next to each other be at the bar (the actual bartop), watching a show or a movie and things like that. Sitting across is for later down the road. Requires too much choreography in getting to know each other.

What you want is a nice couch which is shaped in an L form so you're sitting in a 90 degree angle to her. That way is perfectly normal to sit and you're close enough to develop some good kino.

Across from. It's easier to watch her eyes that way. Study what she's looking at. Does she look at her meal the entire time it's at the table without looking up? Does she keep looking at other guys? Girls? Does she stare at your lips? These can tell you tons about her motivations.
