You’re overthinking it. Start with telling her a date and time that works for you. If she suggests an alternate time, it means she’s interested and shows she has at least half a brain (some bitches won’t even go that far, they’ll just decline without suggesting another time). If her alternate time could also work for you, then take it or don’t - it’s up to you.

Ask 2 days or days when you are free. I.e. are you available on friday or sunday

This insecurity comes simply from asking out via text. In a real conversation, you'd never run into this. Thus, you should ask out in person or via the phone. So ask for the number first, then call and suggest a date.

If her interest is decent, none of it will matter. I generally like to offer 2 days I'm free and she can join that. ie- "I can do Wed or Fri".
