As you know many statics shows that --% of rape & sexual assault cases go unreported. My question is that if they go unreported how do they make these statics?

The actual figure is a dark number, however, they generally use population surveys that ask people

have they been sexually assaulted in the last year
if they reported it to the police or not

also, they look a the comparison between population surveys and police statistics.

Shear guessing..They project figures that supports their arguments. For example the so called rape crisis on college campuses. The figures quoted were 1in5 or close to that, whereas FBI stats say it's more like 1 in 1000. They tried to claim a rape rate worse than that of the Congo during its civil war when rape was used as fear tactic. Rather than discrediting the argument, they managed to get even Obama to quote it....and thus it became "fact" and led to an explosion of metoo false claims and men being title9'd out of campus with zero evidence or due process. There are many cases of this when claims have been proven false (or they admitted lying) yet men are still subject to no due process and their lives ruined.

The key is the "& sexual assault" added on the end and then define any unwanted male approach as sexual assault and then, when it's time to talk about it, only mention the '1 in 5 women raped' part of it.

Essentially they set out to get as large a number as possible through means that are misleading and entirely lacking in scientific rigour or even basic honesty.

tl;dr, they just make it up, it's not based on anything real.

It’s bullsht like covid. You gotta understand that more many researchers they must just make sht up to get funding. If they don’t, they don’t get paid.
