It seems like you have a mild case of oneitis. You say you have abundance, but it sounds like you are scared to lose this girl because "you'll never find another like her." Can't answer this for you, as it's entirely up to you and your feelings. Is her immaturity a deal breaker? For some it wouldn't be, and for others it is.

I feel like I've been there. It's hard to say if she'll ever eventually mature, usually it's challenging life moments that do such a thing to a person. You could hang in there and become annoyed and eventually resentful, or you could sit back, take things slow, and enjoy your life. You need to decide what works for you, I don't think she needs to be cut out at this point but waiting for her to change is a fools errand.
