That would depend on your companies policies and local laws.

Some states would allow it, some states you could only record video with no audio, some states you could not record at all unless you posted a sign

Then there is your companies policies which may prohibit it so even if you "won" if someone accused you, only to be fired because you had an unapproved recording equipment.

Then you have to ask what are you protecting yourself against, an HR Complaint or a criminal complaint.

90% of the time if it take a video to prove your case in order to keep your job you likely should be looking for a new job anyway because you will be walking on egg shells, and chances are it will be a rather hostile environment

IMO the Pence Rule + complete Stoicism when interacting with women in the work place is best defense

Consult a lawyer for sure. Even if you can't record a handwritten log is admissible in court. I would back it up on the web via your cell phone camera for a good time & date stamp. DO NOT use company machines for this.

Definitely wire it up. So many men have been saved from false allegations by video recordings, or even voice recordings. In this day and age it is necessary.
