You don't. You plead guilty of not guilty to a crime, not an action. There's no crime called "Having sex with someone". It's "Statutory Rape". And conditions have to be met for a crime to have been committed. For example, a valid defence for having sex with a 15 year old, is to have also been 15 years old at the time. A valid defence here in Australia at some point (not sure if it still is) is if you met a person and had a reasonable expectation that they were definitely overage. For example, you meet a girl in a nightclub where everyone is meant to be over 18. She looks 18. You pick her up and never ask for her ID. There was no reasonable belief that she would have been underage, thus it's a valid defence. Whether it works or not is up to the jury. In both cases, sex was had with an underage person, but there is a defence for it and so you can plead not guilty even though the action occured.
